Help, I have so many plums I’m running out of things to do with them!

So if anyone likes plums, and who doesn’t, now is the time to preserve them and buy them as they are cheap.

So here are a couple of my favourite plum ideas to help get through this glut.

Roasted plums

Cut in half, sprinkle with a touch of brown sugar, star anise and cinnamon and roast. Jar up.

Plum pork chops

Crush some fresh rosemary with butter and heat half in a pan, season chops and fry until cooked, remove and add halved plums. Add the rest of the butter and serve over the top.

Plumonade

12 small plums, destoned
4 tbsp honey
2 tbsp natural cane sugar
500 ml water
2 large lemons

Combine the first 4 ingredients in a large saucepan and bring to the boil. Squeeze juice from the lemons into the saucepan along with the rinds. simmer for a further 10 minutes. Remove from heat and allow to cool. Strain liquid through a sieve. Store in the refrigerator.

Plum Granita

1 litre plums, deseeded and blended
100 ml lemon juice
10 tbsp caster sugar

Combine all the ingredients in a saucepan over a low heat, and melt the sugar in the juices. Pour mixture into a tub or basin ( a container thats shallow and wide) Put into the freezer until iy begins to crystallise. then scrape it with a fork. Repeat three times, once every 15 minutes, until you have an icy slush.
