Oatmeal Slice with Avocado Smash

This week we are still on vegetables, sorry Andrew. I’m just amazed at how cheap some vegetables have been. And it’s not just winter vegetables , as yesterday our local fruit and vegetable store had 3 avocados for a $1!

So this week we are talking Avocado. Is it a fruit or a vegetable?
It’s a fruit!
An average avocado has 160 calories.
However 75% of avocados are unsaturated fats (good fats) which is great for heart health.
Rich in vitamins.
So bottom line is Avocados are packed full of vitamins, minerals, fibre and healthy fats.
This weeks recipe is more of a snack than a meal. However you could serve this Oaty slice on the side of a rich Pumpkin soup, or pop a slice into your kids lunch boxes.

Oatmeal slice with avocado smash

Prep time: 20 mins
Cooking time: 30 mins

  • 2 tbsp dried apricots, roughly chopped
  • 2 tbsp dates, roughly chopped
  • 2 tbsp roasted almonds, crushed
  • 1 tbsp pumpkin seeds
  • 1 tbsp sesame seeds
  • ½ tsp caraway seeds, crushed
  • 190g wholemeal oats
  • pinch salt
  • 95g butter
  • 2 tbsp brown sugar
  • 1 tbsp honey

Preheat oven to 160*C and line a 20x30cm baking tray with greaseproof paper. Soak the chopped apricots and dates in hot water for 5 minutes, then drain and transfer to a large mixing bowl. Add nuts, seeds, oats and salt and stir. Place butter, sugar and honey in a saucepan over a medium heat. Bring to a simmer and cook until a light brown colour. Pour immediately over other ingredients and stir to combine. Spoon mixture into baking tray and press down lightly by hand. Bake for 30 minutes or until golden. Slice should still be a little soft but will firm up when cool. Cut into bars.

Avocado smash

  • 2 ripe avocadoes
  • juice of ½ lemon
  • salt
  • pepper

Whisk together avocado and lemon juice. Season to taste. Spread avocado over oatmeal slice and serve alongside soup.
