After selling my final restaurant boy and bird I have found myself home alot more for dinner.
Its a great thing, hanging out with my girls and building the farm up for the cookery school.
I found myself at home one night cooking dinner for the family in a hurry as we were late home.
So we had some pretty tasty pork sausages from our local butcher and some potatoes that I sliced, tossed lightly in oil spreading them out on an oven tray. Placing them in the oven on 180 degrees for 15 minutes till golden. I just love these potatoes.
Then I wanted a salad. But its too cold for a green leafy so I created a hot slaw!
This salad really is awesome.
Ingredients
- 1/2 savoy cabbage, finely sliced
- carrot, grated
- 1 red onion, finely sliced
- 2 cups button mushrooms, sliced
- 1/2 cup cashew nuts, roasted and crushed
- 1 chilli
- salt and pepper
- 3 tsp vegetable oil
- 3 Tb Mayonnaise or dress with a light dressing for a lighter option
Heat a frypan and add the onions, cooking on a low heat before adding the mushrooms.
Continue to cook for another 3 minutes adding more vegetable oil if required.
Now add in the cabbage and carrots, continue to saute adding in the chilli and cashew nuts.
Tip slaw into a serving bowl, finishing with either mayonnaise or low fat dressing to serve.
Combining this with the pork sausages and crispy potatoes made for a wonderful, quick and tasty dinner!
