Hot Ginger Loaf

Well it is coming up to that time of year that people start to celebrate a mid winter xmas dinner!

This recipe is a great alternative to the traditional Xmas Pudding and is full of ginger goodness!

You will need

  • 50 gm of butter
  • 1 tbsp golden syrup
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 cup flour
  • 1 tsp baking powder
  • 1 tsp ground ginger
  • 1 tspn mixed spice
  • 1 tspn ground cinnamon
  • 1/2tsp ground cloves
  • 3/4 cup milk
  • 1 tspn baking soda
  • 1/4 cup canola oil
  • 1 loaf tin
Preheat oven to 180 degrees
Melt butter , golden syrup, and brown sugar in a bowl over boiling water
Remove from heat
Mix in beaten egg
Sieve together the flour , baking powder, ginger, mixed spice , cinnamon , and cloves, add to liquid ingredients
Warm the milk and add baking powder to dissolve
Add the milk mixture and oil to loaf batter and mix well.
The mixture will be runny
Spray loaf tin and bake for about 20 minutes until golden brown , and a skewer comes out clean when inserted into the middle.This loaf could be served with a natural yoghurt, or even a delicious egg custard!
