We have just harvested some eggplants from the gardens and yesterday we had a couple of classes so I created a pretty tasty recipe using them and some yoghurt Flatbread.
I would like to share those recipes with you today as the Flatbreads, in particular, were a huge hit with the guests. Baba Ghanoush is something most of us purchase from the supermarkets, but it’s really easy to make and you just need a couple of ingredients.
Baba Ghanoush
- 2 eggplants
- 2 tbsp tahini paste
- 4 cloves of garlic, roasted
- 4 tbsp vegetable oil
- Salt and pepper
Preheat an oven to 200 degrees, cut the eggplants in half and then score the surface flesh. Rub with a little oil and place onto a tray in the oven. Cook until the eggplants are golden and a knife easily passes through the flesh.
Using a spoon, remove the eggplant flesh from the skin and place into a pestle and mortar. Crush the garlic first, followed by the eggplant then add the rest of the ingredients. Season.
Serve with the wonderful Flatbreads!
Yoghurt Flatbreads
- 350 gm self-raising flour
- 1 tsp baking powder
- 350 gm natural yoghurt
Add all the ingredients together in a bowl and mix with a spoon, then use your hands to pat and bring everything together
Dust a clean work surface with flour, tip out the dough.
Knead for a minute or so just to pull everything together, before leaving in a warm spot.
Dust a clean surface and rolling pin with flour, divide the dough into small golf ball-sized pieces.
Flatten with your hands, then rolling pin roughly 2-3 cm thick.
Either place dough into a griddle pan on high heat or into a pizza oven.
Brush with a little garlic oil.
