It’s Fieldays week!

It always brings an air of excitement for me, mixed with a certain feeling of fear due to the question of “how cold will it be?”.
As a young boy growing up on a farm in West Auckland, Fieldays were always a pretty cool day. Not only was it a day off school, I got to spend that day with my dad which was also pretty cool.

Back then, I would spend my time at the Fieldays collecting as many brochures as possible, seeing the quad bikes and tractors being high on the list. Coming home to the end of the day with a bag full of colourful brochures which I would then ponder over for the following weeks. Dreaming.

These days I work at it which is also pretty cool, for some pretty special companies like Engel fires, FMG and Green Meadow Beef.

One thing you do at Feildays is walking – a lot! So not wanting to take away from the food vendors at the show I find myself making some food on the run.

So I bring you Mike’s Power Bar.

But most of all these bars are snacks that you can easily make beforehand, pack it and enjoy. They will keep up your energy whilst looking at the amazing stands.

  • 2½ cups cooking oats
  • ½ cup shredded coconut
  • ½ tsp vanilla essence
  • ½ tsp sea salt
  • ½ tsp ground cinnamon
  • ½ cup chopped dried apricots
  • 2 tbsp almond butter
  • 100g good quality dark cooking chocolate
  • ½ cup raw honey

Preheat oven to 160*C and line a 20 x 30cm baking tray with baking paper. Mix the first six ingredients in a large bowl. Place almond butter, chocolate and honey in a heavy-based saucepan over low heat. Stir until melted together. Pour over the dry mix and work quickly to combine. Press into a baking tray and put in the oven for 30 minutes. Remove from oven and allow to cool completely (finishing in the fridge) before cutting into bars.
