Today we bring a recipe for all those wonderful mothers! But more so a recipe that anyone can cook for their mum. Being kids, husbands or good friends.
This lemon baked chicken recipe is pretty simple as the bag you cook the chicken in does all the cooking and ensures the end result is a moist, tender and extremely tasty dinner.
So get out kids, grab the credit card, do the shopping and cook dinner tonight!
Lemon Bagged Chicken w Hot Roasted Kumara Salad
- 1 size 14 chicken
- 2 lemons
- 8 cloves garlic, crushed seasalt
- 1 oven bag
- 15 small Kumara
- 1 cup dates chopped
- 1 cup mint, chopped
- Lemon, zested and juiced seasalt and pepper
- 10 mint leaves
- 1 clove garlic
- 1 tbsp ginger, peeled
- 2 tbsp grapeseed oil
Preheat the oven to 180·
Remove the chicken from the bag and wash quickly. Cut the 2 lemons in half and stuff them into the cavity of the chicken along with the garlic and salt. Place the chicken into a bag and seal.
Place into the oven for 40 minutes before removing and set aside, leaving it in the bag.
Cut the kumara in half and drizzle with oil and sprinkle with some salt. Place into the oven and roast until tender. In a large bowl combine all the rest of the ingredients including the kumara and set aside ready to be served.
To serve remove the chicken from the bag and removing a leg to check the doneness. If the juices run clear serving time.
Place the chicken into a bowl on top of the roasted kumara and pour the juices of the chicken over the top.
