It’s not so healthy but healthy enough
It’s not that easy but worth the effort
It requires some ingredients that are not your normal
And most random of all its so so delicious!
We are talking about ice-blocks and at this time of the year being so hot and leading up to Christmas you can smash out a pile of these ready for the Xmas break and school holidays.
Prep time: 30 mins
Freezing time: 2 hours
- 2 oranges, roughly chopped
- 1 lemon, roughly chopped
- 2 limes, roughly chopped
- 3 cups water
- 1 vanilla pod (halved length-ways)
- 1 cinnamon stick
- 4 star anise
- 1 small knob ginger
- 1 tbsp instant coffee
- 2 cups raw sugar
- juice of 1 lime to serve
Squeeze oranges, lemon and first measure of limes into a saucepan. Drop in fruit and add water. Scrape seeds from vanilla into saucepan. Add cinnamon, star anise, ginger, coffee and honey and bring to the boil. Reduce heat and simmer for 10 minutes. Remove from heat and leave to stand for 10 minutes. Strain and pour into ice block moulds. Place in freezer for approx. 2 hours or until frozen.
To serve: pop ice blocks out by dipping molds into boiling water, then slide out.
