It’s that cauliflower time of the year!

Let me share a couple of fantastic cauliflower recipes! One really healthy and one not so!

I’m cooking a dinner tonight for couple that won “a dinner cooked by me in their own home” at a charity auction. The menu begins with,

Roasted cauliflower soup

  • 1 head of cauliflower
  • 2 tbs olive oil
  • Sea Salt2 onions, chopped
  • 4 cloves garlic, peeled crushed
  • 2 litres of vegetable stock
  • 250 ml cream or milk

Preheat the oven to 180 degrees
Bring a pot of lightly salted water to the boil and drop in your cauliflower (look at blanching on Kiwi Living) remove after 1 minute and place onto a roasting tray. Sprinkle with oil and sea salt and roast for 15 minutes or until tender.

Heat a pot and add oil and gently fry onions and garlic, add roasted cauliflower and stock. Bring to the boil and simmer for 15 minutes.

Using a blender or stick blender, blend the soup and add the cream. Season

Serve with a little truffle oil if you really want to blow your mind!

Just another quick cauliflower recipe which I just love

1 head cauliflower, blanched for 2 minutes and refreshed in ice water
Olive oil
Seasalt

Cut the cauliflower into small florets and drizzle with olive oil and sea salt, char on BBQ until lightly coloured.

Toss with,
3 Tbsp ginger, grated
3 tbsp parsley, chopped
1 lemon, zested
Sea salt
Drizzle with oil olive
