Roasted Carrot Salad with Black bean Salsa

By 22nd February 2018Cook

Well if kids ask if it’s true that carrots are good for your eyesight, you can answer with a YES!
They are high in Vitamin A which is an essential nutrient for good vision. They can also kill harmful germs in the mouth and help prevent tooth decay. They are also a great source of potassium which can help maintain healthy sodium levels in the body, this in turn helping to reduce elevated blood pressure. And they also taste so very good! especially if you roast them.

I served this salad at a corporate function a couple weeks ago and I received SO much amazing feedback about it. Maybe it’s the combination of the slightly spiced sweet carrots paired with an earthy citrus bean salsa makes for a winning combo!
