Mike’s Baked Beans

After getting up early on Saturday morning to watch the beginning of the RWC, I thought how nice would it be to make a wholesome breakfast, quickly from scratch.
To speed thing up in the morning you can have the tomatoes already done and then its quite and easy to finish.

Mike’s Baked Beans

First up, you can do this the day before
8 tomatoes, cut across to the tomato
Lay them onto to a tray and sprinkle with a little salt and a good crack of pepper
Place in the oven on 170 for 20 minutes. Remove.
Take a heavy pot and sauté

  • 4 slices of panchetta or a good smoky bacon
  • 1 onion, diced
  • 4 cloves garlic
Add the cooked tomatoes and smash with a potato masher
  • 2 Tbsp dijon mustard
  • 1 Tbspn honey
  • 1 Tbspn dried thyme
Then add your beans
  • 1 can chickpeas, drained
  • 1 can red kidney beans, drained
  • 1 can haricot beans, drained
Bring to the boil and season.
Add a poached egg and some crispy sour dough and boom you have an amazing breakfast to keep the troops going for days!
