Chocolate Fondant

Chocolate Fondant is a wonderful dessert! however you would only normally get one in a restaurant.
BUT I’m going to show you how easy it is to make some at home.

First up the chocolate,
Choosing a dark chocolate is a good place to start. If I’m have a cuppa tea at the end of the night then a nice piece of milk chocolate will work. But when making a fondant we need to talk about cocoa %!

The darker the chocolate the higher the cocoa percentage or the higher the cocoa mass. Revealing a whole new citrus, bittersweet flavor. Once you start experimenting with dark / bitter chocolate the flavor note are much like fine wine or whiskey tasting.

Whittakers dark or Greens & Blacks 70% are great brands that don’t cost the earth.

Chocolate Fondant

serves 8

  • 125 gm chocolate
  • 125 gm butter
  • 1 egg yolk
  • 3 eggs
  • 2 tb sugar
  • 3 tb flour

Preheat oven to 180 degrees

Place the chocolate and butter into a heat proof bowl and then place over simmering water. Whisk egg yolk, eggs and sugar until thick and creamy. Fold in chocolate and then flour.
Grease some coffee cups, small mould and fill with fondant mix.
Bake for 12 minutes

Tip out and serve with yogurt ice-cream
